The Spam Fried Rice
What is your favorite comfort food? Well mine is Spam Fried Rice, which my mother used to make me growing up. I remember always asking for it because I just couldn't get enough! It's just one of those dishes that always makes me nostalgic! Not only is this recipe so delicious it's rather easy to make. Here let me show you my Spam Fried Rice Recipe:
What Ingredients To Make Spam Fried Rice
2 cups of white rice ( about 4 cups of cooked rice) I used Jasmine
1 Can of Spam
1/2 yellow onion
2-3 Cloves of Garlic
1 small can of peas & carrot
4-6 eggs (whatever you prefer)
3 tbsp of Soy Sauce
Black Pepper
1 tsp of Cayenne
1/2 tsp of Oregano
1/2 tsp of Parsley
1 tbsp of Vegetable oil
Wok with a lid
Prep Work
Chop onion
Mince Garlic
Cut spam into cubes
Cook rice or have pre-cooked rice ready
The Eggs:
Crack the eggs into a bowl
Add Oregano
Add Parsley
And a Pinch of black pepper
Scramble it up well
How I Cook Spam Fried Rice
Heat up the Wok on medium heat then add the Vegetable oil, throw in the onion until they are almost yellow, after that add the garlic until it starts to turn a golden brown. Once those are done throw in the cubbed-up spam. Season with Cayenne (if you want it spicy like me) and a pinch of pepper. Let the spam crisp up with the lid on top, stir occasionally until it's crispy enough for you!
Throw in the rice, add the soy sauce, a pinch of pepper, and let those ingredients cook for 5 min-ish with the lid on while stirring occasionally.
Make a hole in the center of the rice so you can add your eggs right into the pot and scramble them while it's in the hole, add the peas & carrots, and after it's scrambled for a bit stir it all together.
Let it cook with the lid on for about another 10-15 mins stir regularly until the eggs seem cooked enough and not liquidy.

Adding The Egg
If you got a little confused about the hole I was talking about throwing the egg into, it looks like this picture. How much egg you use in it can cause a longer cooking time but I personally love a lot of egg inside my spam fried rice! I like using this method so I don't have to use another pan to cook the eggs, if you want to you a second pan to cook the eggs more power to you, I just hate washing dishes.
The Rice
Now everyone always speaks about how, when you make fried rice you should always use at least one-day old rice....I agree but I never remember to do it, so I normally always cook it right before! It can come out a little soggy if you're not careful but you can always cook the rice with a little less water in the rice cooker or cook it for a little longer to dry it out while cooking the spam fried rice. I find that It comes out tasting great even with fresh cooked rice. Food That Speaks To You
This dish is so easy to make but has so many memories for me! You can always change it to match whatever you like, the whole fun of fried rice is that you can pretty much add or subtract anything you want! I remember many mornings my mother would add leftovers from the night before to fried rice and it would be amazing!
