How I Make Pork Adobo
Adobo has always been one of my mother's favorite dishes to make for us as children growing up. My mother is Filipino and she has always loved cooking dishes from the Philippines as a way to connect to her home as well as us kids to our heritage. Though the way my mother cooks Adobo and the way I cook it differs greatly, It's all about the love! Let me show you how I make my Pork Adobo with potatoes.
Ingredients
2-3 pounds of pork (I use pork Ribblets)
1/3 cup of white vinegar
1/3 cup of soy sauce
1/2 cup water
4 cloves of garlic
1/2 large yellow onion
2 medium potatoes (russet)
4 dried bay leaves
1/2 Tbsp of sugar
10-12 peppercorn
1 Tbsp of vegetable oil
Regular ground pepper
Let It Marinate
The first thing you want to do is get the marinade ready by chopping up the riblets between each rib then you want to mince the garlic and mix them together in your marinading bowl/container. Once you got all that in the bowl add the soy sauce, white vinegar, and water. The last ingredients to add into the marinade is a pinch of pepper and about 4 dried bay leaves, then throw it into the fridge and let it marinate for about an hour.
I would say about 30 minutes into waiting for the ingredients to marinate start peeling and cutting the potatoes into bite-size chunks and lyonnaise the yellow onion (cut into long strips). Put each of them into a bowl and put it to the side so it's ready to go!
The Cooking Starts!
To start I use a wok with a lid because I cover it for a lot of the cooking process, put the wok on the the stove on medium heat, then add the oil once it's hot enough to cook the onion add the onion and let it sautee until they get a little toasted around the edges and a little bit of color. Once the onions are ready add the meat but just the meat leave the marinade in the bowl for right now.
Once the pork gets a little bit of color add the marinade, peppercorn, and the potatoes. Bring the heat down and let it simmer for about 45 minutes with the lid on. Stir it every 5 minutes or so that way you make sure everything gets a good flavor!
Now if you like your potatoes a little firmer I would wait about 15-20 mins of it simmering before adding the potatoes. I however love them super soft that's why I add them right away.
After 45 minutes add the sugar and a pinch of pepper and stir it all together, then leave it uncovered to cook for the last 15 minutes. Once that is up the sauce should be reduced and everything amazingly flavored!
All that's left is to serve and enjoy!
The Meat And Potatoes
Adobo is a very versatile dish that can be crafted with many different cuts as well as different types of protein such as pork, beef, poultry, and even fish! I've found that I love using riblets instead of the more traditional pork belly because I feel like it absorbs the flavor better than anything else I've tried. My mother however seems to prefer chicken when she cooks it up. I bring this up to let you know that it's okay to try different proteins and cuts until you find the one you like the most!
Make It Your Own
You don't have to take my recipe as written in stone, you can always add or subtract ingredients to one's own tastebuds. For example, I've never really cared for the peppercorns (too many times I've taken a bite out of them haha) so sometimes I won't even put them into the mix. You can also play around with the amount of vinegar and soy sauce to get it to taste right for you as well! Heck even in the Philippines, each region has its own way of cooking it up so you can mix and match to your heart's desire and find what is best for you. Half the fun of cooking for me, is figuring out how to make it your own!
